Blueberry Coconut Ice Cream Bars
Summer is almost here and this means fresh blueberries are coming! As it starts to heat up outside why not cool off with this delicious and dairy free treat.
Ingredients:
2 Cups of Blueberries
1/2 Cups of sugar
1 Can Coconut Cream
1 Cup Unsweetened Shredded Coconut
Instructions:
- In a sauce pan mix the blueberries and sugar together and heat over medium heat to create a sauce. Cook for about 10 minutes- mixture should be thick and bubbly. Remove from heat and allow to cool
- In another bowl, mix coconut cream and shredded coconut
- Using a popsicle mold, alternately spoon the blueberry mixture and the coconut mixture to create unique layers of colour
- Freeze for 5 hours
